For every 20 recipe attempts, I might accidentally create something worthy of repeating. To realize a dish worthy of shouting from the rooftops is a one-in-a-thousand thing. The odds are even more remote while cooking in an RV.
But lightning has to strike somewhere.
And when it did, I ended up with a hearty … beefy … addicting … eat-though-I’m-full … smoky-peppery-sweet … slap everybody in the room … serve no sides … I can die now dish. Yes folks, this is rarefied fare — with a little help from my friends at Stubb’s.
It’s been months and months since the folks at Stubb’s sent me a bottle of their Sweet Black Pepper Anytime Sauce™. As they occasionally do, Stubb’s surprises me with something in my mailbox with the idea that I’ll cook with it and report back. (That’s our entire arrangement.) I’ve used it as a dip, topper, marinade and baste (check out my Sweet Black Pepper Sauced Scallops w/ Bacon) but nothing has made such a marked impression as my Sweet Black Pepper Meatloaf.
It’s an out-of-the-box version of the American classic comfort food because this is a meatloaf that you’d serve for Sunday dinner — just so you could have the leftover meatloaf sandwich on Monday. It’s that sublime.

Sweet Black Pepper Meatloaf
- 1 lb - Ground beef sirloin
- 1 lb - Ground beef chuck
- 1 - Large egg
- ¾ cup - Dried bread crumbs
- 1½ cups - Stubb's Sweet Black Pepper Anytime Sauce™
- Preheat oven to 350° F.
- Combine beef, egg, bread crumbs and ¾ cup of the Stubb's Sweet Black Pepper Anytime Sauce™.
- Place into an oiled (4×8) loaf pan, or shape similarly and place in an oiled glass baking dish or cast iron Dutch oven (if you're camping).
- In a traditional oven, bake uncovered for about 50 minutes; in a Dutch oven, bake covered for about 40 minutes.
- Pour remaining (1/2 cup) Stubb's Sweet Black Pepper Anytime Sauce™ over the top of the meatloaf and bake for another 5-7 minutes.
